Galbijjim (Steamed Beef Short Ribs with Soy Sauce Flavor)


Galbijjim (Steamed Beef Short Ribs with soy sauce, and pear marinade) is one of the most popular Korean dishes. It's considered a luxurious meal often found on parties, and events. Believe or not, some people have this on their wedding receptions in Korea. Although you need variety of ingredients, the process isn't too difficult. My mother cooked this dish while I was annoyingly taking pictures.

Ingredients: Short beef ribs, chest nuts, dried jujubes, Asian pear, onion, garlic, dried string peppers, soy sauce, corn syrup, sesame seeds

Special tool: Pressure cooker, mixer

1. First, soften dried jujube by keeping it in water for 20-30 minutes. If your chestnuts are dried, add them also in the water but you need more time softening up chestnuts. Try several hours.

2. Now, we're going to prepare the marinade. You need pear and onion grated together. Cut them into pieces first.

Now, add soy sauce before you turn the mixer on.
This is what the marinade looks like.

3. Put the short ribs in water and wait for about 20-30 minutes to soften them up.

4. Cook the short ribs in a pressure cooker. Add water and some salt.


5. Now transfer the meat to the wok.


6. Add the marinade prepared earlier and heat up the pan in high heat.

Also add some corn syrup and more soy sauce (about 3-4 table spoons each) as you heat up the mix.

Add 2 tea spoons of grated garlic


7. Add chestnuts and jujubes.

Continue to heat up the ribs.

Lastly add dried string peppers. It doesn't add much spice at all but I think it's more of a garnish.

Finally, sprinkle some sesame seeds over the ribs as additional garnish. Enjoy!

Hello! This looks absolutely delicious! However, I don't eat beef. Would it be alright if i use pork ribs instead? :)

Hey naranja, the answer is yes. You can pretty much use the same process with pork but when you stir fry on a pan later, add little bit of sesame oil. Also, for steamed pork, add potatoes, carrots, and onions to the stir fry. Personally I would want it a little more spicy but if you also like it to be spicier, use red pepper flakes.

I'd really like to make this sometime because it looks delicious. I was wondering how much beef short ribs I should use and how much soy sauce is needed for the marinade?
