
Preparing sushi rice is very easy. First you cook rice in a regular rice cooker. You must use the Japanese kind. Do not use long grain or jasmine rice. Add slightly less water than usual when cooking for sushi rice. Once ready, put rice wine vinegar (refer to condiments page) and sugar. Put enough vinegar so you can taste the sourness in the rice as you test it. Once the flavor is ready, you can spread the rice around the bowl to dry it. Rice shouldn’t be too wet or warm when using it for sushi. Make sure you don’t mush rice particles by stirring around too hard.
